I can't replicate this issue on my end. I can see the taxonomies in my installations. Example:

I need to see your filters and overall configuration in order to know what is going on.
However, since taxonomies are tied to Filters, one thing you must check is that you have a filter for each content type.
For example, if your results are Joomla Articles, you must have a filter with the content type set to Articles where you have selected the appropriate categories in the filter field Search by Category.

I've already found the real problem. I have filters created, but everything works only in categories. If articles are included in subcategories, the articles don't show up in the filter. Unfortunately, I can't select subcategories in the filter for Contents maps, and I didn't find a switch anywhere in the configuration that gives the option to include articles in subcategories.
It seems to me like a bug or limitation of the extension, but maybe I'm wrong and it's somewhere in the settings. In version 4.2.9 the extension accepted articles from subcategories.
I didn't figure it out right away because I have all the articles on my site just in subcategories.

There have not been any changes to the component from 4.2.9 to 4.3.1 as far as filters and content maps are concerned.
Taxonomy labels work fine for subcategories too in my installations.
I am going to need back-end access. There is no other way for me to check the problem.

the accesses have been completed. There are two articles in the administration (Test category and Test subcategory) and if I type "Test" in the search box on the frontent, it only finds the article with the name "Test category" including tags, but not the article from the subcategory.

I have created a similar article structure in my installation.
The articles from subcategories are displayed without any problems, even though you are right that the label is missing when the article is in a subcategory.
But all articles are displayed fine in my case. I'm still looking into it in your site.
Have you created any template overrides for the component?
I didn't create any overrides. I get the same behavior even if I install a clean installation of Joomla (latest version) and LiveSearch (latest version). The problem is exactly the same without any edit changes and with the default Joomla installation.
I have found the issue. You are right that if you select only Category maps in the filter, then the results do not show articles from subcategories.
I will fix this in the next update.
For now, try selecting also all Authors maps in the articles filter. This should temporarily fix the issue.
Additionally, if you are also using a Minitek Live Search menu item for displaying search results (instead of only the module), you should create a separate Search form for the menu item.
Yes, we have this on the production version and it was on the test version as well, but when we were troubleshooting this issue we did several uninstalls/installs and this was never fixed.
Now we can revert it back to the original state now that we know the cause of the problem.
When might a new version come out? Because we keep adding authors and will have to add daily now to make it work.
